Scotch Quail Eggs

12 fresh quail eggs, room temp.
8 oz Italian sausage, not in casings
2 eggs
Bread crumbs
Flour
Canola oil for deep frying




Bring a pot of water to a boil. Cook the eggs for 2 ½ minutes. (that’s for soft boiled the way I like them, but they can be cooked 2 minutes more for hard boiled). Take out of water and place in ice water.

Peel eggs carefully.

Puree the sausage meat in a food processor until fine and pliable. Take out and place in refrigerator until cold.

Roll peeled eggs in flour, take 1 tablespoon sausage meat and form into a disc.2 ½ - 3inches in diameter.

Wrap the egg in the sausage making sure that all of the egg is covered in a thin coating of meat. Repeat until all the eggs are coated. Cool for 30 minutes.
Have a bowl of flour a bowl of beaten eggs and a bowl of bread crumbs ready
Roll the eggs, one at a time in the flour then the egg and finally the crumbs making sure all are well coated.

Heat oil in a tall sided pot until it reads on a food service thermometer
Carefully place the eggs in the hot oil and fry for about 1 minute or until golden brown. Take out and place on an absorbent paper towel.

If you like them hot cut into 2 halves and serve, otherwise you can serve cold.
