Drink Here Now: 5 Places to Sip This Week

1. The Mortimer Opens in the Hotel Adagio: The popular Bar Adagio has departed this life, but its successor, The Mortimer, has plenty of new advantages, including a renovated street-side space and a full menu of dishes like roasted poblano quesadillas, roasted pork belly with white beans, and filet mignon with lobster sauce. Most importantly, the cocktail menu has been refreshed, with intriguing drinks like the Early Bird (mezcal, kiwi, lime, St. Germain, salt; $10) and the Green Dream (pisco, green chartreuse, jalapeno, mint simple syrup; $13). For groups, they've also got three punch bowls that serve 2-4, including the Phantom (blackberry-infused brandy, Snap ginger liqueur, champagne, almond syrup, orange; $34). (Monday-Friday, 4 pm-12 am, Saturday-Sunday, 12 pm-12 am, at the Hotel Adagio, 550 Geary St., Union Square.) 

2. The Hideout at Dalva's New Menu: Most people know Mission dive bar Dalva, which is adjacent to the Roxie theater on 16th Street, but not everyone knows that they've got a separate stick in the back, The Hideout, which focuses on craft cocktails (all $10). Classic drinks like the G&C (gin, celery bitters, lemon) remain, but they've been joined by new sips like the Altered State (mezcal, blanc vermouth, gentian liqueur) and the Sweet and Bitter Fruit (gin, plum, tamarind, lemon). (Daily, 7 pm-2 am, at Dalva, 3121 16th St., Mission.)

3. Blow Pop Happy Hour: No plans tonight? Head over to the collaboration happy hour between Noise Pop and Blowfish Sushi, where the members of Thee Oh Sees will be manning the DJ decks, alongside Kelley Stoltz. To fuel your dancing, they'll give a free sake shot to anyone who RSVPs in advance, and the bar will offer deals on Trumer Pils all evening. (Wednesday, August 8, 6-9 pm, at Blowfish Sushi to Die For, 2170 Bryant St., Mission.)

4. Summer Beer Pairings at A16: Every Thursday for the rest of August, A16 will be offering special beers to pair with their selection of tasty bites, curated by beer expert Michael Meier. Most of them will be poured by the glass from large-format bottles, allowing diners to sample rare brews without the hefty price tag. Among the pairings at the moment: crispy porchetta with roasted peaches, served alongside a Seizoen farmhouse ale from Oregon's Logsdon, and duck breast with green beans and Calabrian chilies, paired with a chili-infused Verdi imperial stout from Italy's Birrificio del Ducato. (Every Thursday in August, 5:30-10 pm, at A16, 2355 Chestnut St., Marina.)

Making Great Gin Cocktails at Home: Going out to a bar is always more than just the drink that's in front of you, but sometimes, it's good to know how to whip up a classy concoction for an evening with your DVD player. If gin is your poison, you'll want to sign up for the Boothby Center's Monday class with Tony Abou-Ganim, a nationally renowned cocktail expert and author of The Modern Mixologist. The $45 class will give you all the expertise you need to mix your own martinis, Negronis, and other gin libations-- and of course, you'll get to drink your practice work. Register here.
