Secret Recipe: Glen Ellen Star's Brussel Sprouts with Bacon Marmalade

Feeling guilty about not eating enough veggies, but don't want to sacrifice the amount of bacon in your diet? Chef Ari Weiswasser of Glen Ellen Star has the perfect recipe so that you never have to choose between the two. 


Brussel Sprouts with Bacon Marmalade 

Serves 2

Ingredients for the Bacon Marmalade:

2.5 C red wine vinegar

1 C glucose syrup

1 C brown sugar

3 C small diced bacon

1 C small diced onion 

1. Combine red wine vinegar and glucose, reduce to a thick glaze. Keep warm and set aside. 

2. Small dice and render bacon until crispy.  

3. Small dice and sweat onion in bacon fat. 

4. Drain off fat and fold through glaze. 

*Note: Glucose syrup by nature is not sweet and has little to no flavor, but helps to provide body when reducing the liquids. Corn or maple syrup are similar in viscosity but would make the marmalade much too sweet. 

Ingredients for the Brussel Sprouts:

Approx. 6-8 Brussels sprouts per person, halved 

High smoke point cooking oil, (ex. canola or peanut)

1. Oil a cast iron pan large enough to fit a healthy portion of Brussels sprouts and get hot in a wood oven or hot grill. 

2. Slice Brussels sprouts in 1/2 and toss in a bit of oil and salt.

3. Put into hot cast iron pan and roast until deeply caramelized. 

4. Dress with bacon marmalade. 

*Note: If you don’t have access to a wood oven or grill, Brussels sprouts can be cooked at home on direct heat to start the caramelization process and finished in a hot oven to ensure Brussels are cooked through.
