The Tahitian Fix is an interpretation of a Pisco Punch, a cocktail famously born in our fair city. Created at The Bank Exchange in the late 1800s (which was located where the Transamerica Pyramid stands today) the Pisco Punch is the perfect blend of botanicals, sweetness, and crisp citrus that harmoniously complement the impending spring weather. Barsol Pisco Italia is the choice pisco, partially due to the fact that Pisco Italia was the varietal used in the original Pisco Punch, but mostly due to Barsol's soft roundness, delicate botanicals and floral hints. It is a beautifully balanced Pisco that holds its own in any cocktail, especially this one.

Tahitian Fix

2 oz Barsol Pisco Italia
.75 oz fresh lemon juice
.5 oz vanilla agave nectar*
.5 oz pineapple gomme syrup
1.5 oz float of seltzer water
Lavender blossom garnish

*Vanilla agave nectar:
1 vertically sliced vanilla bean
1 cup agave nectar
Infuse for 24 hours

Method: Shake all ingredients with ice and fine strain into Collins glass. Top with seltzer and add lavender blossom garnish.
