Michael Chiarello sure knows how to put on a good show. He's done so at his newest venture on the Embarcadero, Coqueta, but more recently rendered Late Night host Jimmy Fallon nearly speechless with his antics on last night's show. Chiarello followed a "crab off," during which our own West Coast Dungeness trumped the East Coast's blue crab (according to Questlove), with a special liquid nitrogen-fueled gin and tonic made especially for Fallon, dubbed the "Jaime maneuver" (Jaime is Spanish for Jimmy). Of course, he can't help but show off his famous dragon breath.
