Pimm's Cups are a classic drink for warm, summer days like today. Elixirmixologist H. Joseph Ehrmann riffs on the cocktail with cooling celery and suggests other variations, such as adding a quarter of a kiwi to the blend or a touch of salt or lemon pepper on the glass rim.

Makes 1 

1-inch fresh English cucumber

2-inch celery stalk, closer to the heart for sweetness

1/4 cup cilantro 

1 ounce lemon juice

1/2 ounce Pimm’s

3/4 ounce agave nectar

1 1/2 ouce Square One Cucumber organic vodka

1. In a mixing glass, muddle the cucumber, celery, cilantro, and lemon juice into a pulp. 

2. Add the Pimm’s, agave nectar, and vodka. Cover in ice, and shake hard for 10 seconds. 

3. Strain over fresh ice, and garnish with a center piece of celery.
