Secret Recipe: Swiss Green Bean Casserole from The Front Porch

Home is exactly what chef Mark Goodger has in mind when he gets to working his Soul Food magic in the kitchen at The Front Porch. One of his classics is a green bean casserole, adapted from his mom's original recipe.

Serves 6

1/4 cup bread crumbs

4 tablespoons of butter, melted

1/4 cup freshly grated Parmesan 

2 tablespoons flour

1 teaspoon salt

1/4 teaspoon pepper

1 small onion, minced

1 teaspoon sugar

1 cup sour cream

4 cups French cut green beans, cooked and drained

2 cups grated Swiss cheese


1. Mix bread crumbs with 2 tablespoons of melted butter and Parmesan, and set aside for the topping.

2. Place the remaining butter in a large saucepan over low heat, and stir in flour, salt, pepper, onion, and sugar. Add sour cream, and stir constantly until sauce is bubbly and thick. Remove from heat, and fold green beans into sour cream sauce.

3. Spread beans into a buttered baking dish. Sprinkle Swiss cheese evenly over top. Sprinkle Parmesan crumbs evenly over cheese. Bake at 400 degrees for about 20 minutes or until heated throughly.
