Secret Recipe: Sweet Corn Paletas

7x7 asks the city's chefs for the recipes to their most loved cocktails, bar snacks, starters, mains, and desserts. If there's a dish you can't stop thinking about and want to make at home, email lauren@7x7.com. Your wish may end up on the blog, along with the actual recipe from the chef.

With Labor Day weekend still fresh in our minds and an abundance of leftover kernels from Monday's barbecues still in the fridge, why not celebrate the beginning of Indian summer with sweet corn paletas. Bay Area cookbook writer Charity Ferreira's recipe in her new book Perfect Pops makes six to eight paletas that are creamy and sweet. (Recipe used with permission from Chronicle Books.)

The Swedish Smile: Winner of SVEDKA and 7x7's Mixology Competition

You may remember our epic mixology competition with SVEDKA a few weeks ago, pitting SF bartenders against one another in the race to create the tastiest SVEDKA cocktail. We asked you to vote for your favorite, and you did. The winner by a landslide was Aom Aphiradee of Ozone Thai Restaurant & Lounge in SoMA, who created the tasty, ginger and basil-infused Swedish Smile, inspired by her Thai heritage.

This year, Lori Baker and Jeff Banker started serving fine-dining brunch at their lower Pac Heights restaurant, Baker & Banker. One of the stand-outs is their house-smoked trout on top of a potato latke with pickled beets and a pile of shaved fennel. While their secret to smoking trout is still hush-hush, you can get a high-quality version at most grocery stores to recreate the dish at home.

Secret Recipe: Mamacita's Jicama and Strawberry Salad

Mamacita's version of this rustic Southern Mexico salad is light and refreshing--perfect for the end of strawberry season. Come fall, you can swap out the strawberries for pomegranates and grapefruit. When you're ready to serve, turn the salad out onto a platter, and garnish with any remaining herbs and a sprinkle of finely grated cotija or Parmesan.

Charles Phan's Bu Luc Lac (shaking beef) is a signature dish at The Slanted Door. Cubes of tender filet mignon are sautéed with red onions and a vinaigrette and then served with a salt and pepper dipping sauce over tender watercress.

Winning Recipes from the Root + Snap Cocktail Competition at Hecho and Nopa

Back in July, one of our favorite new libations, Art in the Age's organic ROOT + SNAP held a cocktail competition pitting SF mixologists against one another in the quest for the most delicious cocktail using these two new liqueurs. And there's nothing SF bartenders love more than a chance to show off their skills. The creations were judged on presentation, aroma, taste and creativity. Who came out on top, you ask?
