Executive chef Gregory Short keeps up Masa’s legendary reputation, matching the dining room’s lushness with an exquisite array of French-inspired courses. Tuna tartare is strewn with diced mango and avocado and drizzled with a tangy mango vinaigrette, while a beef rib eye is served alongside a flaky tomato tartlet garnished with smoky roasted bone marrow. Desserts, while simple, showcase delicate seasonal flavors, like the Santa Rosa plums with toasted-rice sherbet.
