Nate Appleman Named One of Food & Wine's Best New Chefs

This just in: Nate Appleman, pizzaiolo, San Francisco darling, butcher extraordinaire and chef of A16 and SPQR, has been named one of Food and Wine Magazine's Best New Chefs of 2009. He's joined on the list by Chris Kostow, chef at Meadowood in St. Helena, giving the Bay Area ample representation on the New York-based mag's list. Congratulations! And also, oh no! Now we'll never be able to get a table.

The New Era of Pizzologists (Do You Need To Be Italian?)

You think a trend has reached its peak—and then it just keeps going. Wine bars, fro-yo, pizza. Pizza, pizza, pizza. Pizza. Oh, and by the way, pizza.

Clearly A16, Pizzeria Delfina and Picco weren't pizza enough for us. Chefs with tattoos, fixed gear bikes and 00 flour aren't enough either. The ante has been upped. Now, it seems, you have to actually be Italian or come with papers.

We've got a stack of soon-to-be-released cookbooks from local chefs and bartenders and we couldn't resist sharing—each Friday, we'll be giving you a sneak peek at one of the recipes from the book. This week, we're pleased as punch to be sharing a recipe from the forthcoming book, A16 Food + Wine. This lovely book, photographed by Ed Anderson (who photographed our "Around the World in 31 Meals" story in the August issue) makes me want to rush into the kitchen. This recipe, summer in a bowl, is the first thing I plan to cook.
