Between Piqueo’s and Limòn, I thought SF had had its Peruvian moment, but apparently, it’s just begun. La Mar Cebicheria Peruana is set to open today; and Pisco, a bar and lounge by Destino chef-owner James Shenk, opens the first week of October. (Oh, yeah, and there’s Limon’s new rotisserie.)

Yes, I’ll be headed to the amazing, new California Academy of Sciences to marvel at the albino alligator and the suspended blue whale skeleton and the high-tech hand-driers in the bathrooms (a true force of nature).
But I’m to be honest, I think I’ll just let my kids look at the fish while I eat.

There is cooking school and there is cooking school. The former is characterized by students in an auditorium wearing white coats intent on learning about brunoising, mother sauces, sanitation, hotel pans and ice sculpture. The latter comes in the form of an intimate class situated in a beautiful setting filled with a small group of people who just want to learn how to make a good dinner, all lead by a sweet Sissy Spacek-alike who coauthored the recent cookbook The Art of Simple Cooking with Alice Waters.

Even in my jaded moments (like, say, when we’re in the throes of shipping our October issue and are wondering why on earth we decided to put so many goddamn words in each story), I realize I live in a pretty unique food town. And not simply because we have such good raw product to work with and so many talented chefs and great restaurants, but also because we live in a town where people are willing to take chances.

Now, Hoss is returning to the same SoMa spot where he once started as a line cook and ended up a chef. This time around (tonight to be exact), Hoss will open the doors to Zaré at Fly Trap and offer guests a little bit of history with a side order of modern Mediterranean.

I’ve met some TV stars of the culinary sort: Mario Batali (ok, I didn’t really meet him; like a stalker, I snapped a picture of him as he was riding a bike during the Aspen Food & Wine Classic), Jacques Pepin, Martha Stewart, Cat Cora and Tyler Florence. Interestingly, some seem to keep up their persona off camera (Tyler, Martha, Cat), while Jacques Pepin was a whole different person. Much more serious and political and just pretty damn cool—not at all the sweet French grandpa you never had.
