When you order calamari as an appetizer at a restaurant, it too often comes breaded, fried, and served with marinara sauce. Delfina takes a different route, flash-grilling the calamari until tender, then serving it over a bed of buttery white bean salad. The picada sauce adds an herby garlicky kick, making this one dish you'll want to make over and over again.

Should you think dried pasta is inferior product, think again. Dried pasta is used very specifically for preparations such as carbonara. No self-respecting Roman would be caught dead with a bowlful of carbonara made with anything else. It's a dish that calls for spaghetti with a backbone!
Chef Anthony Strong, one of 7x7's 2010 "Top 20 Under 40", returned recently from a two month trip to Rome where he got paid to learn the ropes (mostly at Osteria di San Cesario), a chef's dream come true. Lucky for us, though, he'll be applying his newfound knowledge to Delfina's next restaurant, Locanda, when it opens on Valencia Street in the spring of next year. Ever since it became public that Delfina’s Craig and Anne Stoll are set to open their fourth Italian restaurant in what is now the 80-seat restaurant Ramblas on Valencia Street by 16th, the rumor mill has been cranking. It is true that they will once again share a wall with Tartine, but as for the other details, Stoll took some time with me today in order to confirm and deny.
