A gorgeous new line of bespoke knives was just launched in San Francisco by local chef Drew Hash, and the handcrafted beauties already have a following from the city's top restaurants. 

All handmade in Hash's Potrero Hill garage, the new line of professional-grade kitchen knives are meant to have everything an established or burgeoning chef needs: a handle comfortable enough to hold for hours, a cut that is useful for a variety of things in the kitchen, and a blade that keeps a sharp edge for a long time. While the handles are primarily made with wood such as California redwood, spalted pecan, and buckeye, the blades are all sharp steel or carbon. 

Drew Hash—whose restaurant experience ranges from Spruce and Boulevardin San Francisco to Campanile in Los Angeles— started playing around with knife making about 5 years ago as a hobby. As his skill developed, he started making the wood and steel knives for other local chefs in San Francisco, including SPQR's Matthew Accarrino and Cory Obenour at Blue Plate.

"As a chef, I know how much every cook needs a good knife," Hash told 7x7. "I can make almost any style of knife, but I prefer to make knives meant to be used in the kitchen."

While most of his burgeoning business comes from creating knives for local chefs, there are also a handful of custom creations available for purchase on the website. Since the site launched in early June, four of the eight available knives, whose prices range from $150-$400 depending on size and material, have already sold out.
