Chuck Hayward Is Obsessed With Negronis

By

Chuck Hayward believes a negroni is a revealing drink, a cocktail that is a true measure of a bartender, leaving no room for error or interpretation. Made from equal portions of gin, sweet vermouth and Campari, it must be made in perfect proportions or one ingredient will overwhelm the others. Where does Chuck go when he wants to scratch the itch?

“In San Francisco, The House of Prime Rib and Harris’ Steakhouse make some of the best negronis in the city, and both have classic drink presentations that must be seen to be believed.  Here, the drink is the king. The bartenders have changed frequently over the past dozen years since I’ve been going, but the drink remains the same. I’ve come to realize that the sound of a negroni being made at these classic bars is one of the most treasured aspects of my life in San Francisco.”
