Matcha Madness

(Yields approximately 20 cookies)

285g flour

3g salt

3g baking soda

200g light brown sugar

100g granulated sugar

170g butter (melted then cooled)

1 egg

1 egg yolk

4g vanilla extract

20g matcha powder

200g white chocolate chips

50g black sesame seeds

1. Melt butter and set aside or in fridge to bring to room temp.

2. Wisk dry ingredients together, including matcha powder.

3. Beat sugar and butter together until smooth, 1 min.

4. Add vanilla to egg and egg yolk, then add eggs to butter mixture to combine.

5. On slow speed, add in dry ingredients in stages, until just combined. Careful not to over mix.

6. Stir in white chocolate chips and black sesame seeds to incorporate.

7. Scoop 2 oz balls onto baking sheet covered with parchment paper and flatten to ¾ inch thickness.

8. Chill dough for a minimum of 30 minutes.

9. Bake at 350 degrees for 8-9 minutes, turning sheet after 4 minutes. Bake until edges are golden and center is still slightly soft and puffy.
