Adding to the roster of Meatball Mondays around town, Balboa Café's Chef Craig offers a new gluten-free meatball made with three kinds of meat. Can't wait that long? Make it for yourself at home.
Balboa Café Meatball
Makes 12 meatballs
1 pound each ground veal, beef, and pork
1/4 cup onion powder
1/4 cup garlic powder
1/4 cup dried oregano
About 3 tablespoon kosher salt
1. Preheat oven to 350 degrees.
2. Mix all ingredients together very well in a large bowl.
3. Using your hands or a portion scoop, form the ground meat mixture into 4oz size balls.
5. Bake at 350 for about 35 minutes or until they reach an internal temperature of 140 degrees.
For a gluten-free entree alternative, serve them with marinara and spaghetti squash instead of noodles. And don't forget to add your choice of cheese (Craig prefers burrata).
