Treat Yourself to Hog & Rocks' Pimento Cheese

By

Pimento cheese is a Southern staple, affectionately known as The Caviar of the South, and the version at Hog & Rocks is the real deal. The key to the perfect cheese spread is to use the best, highest-quality ingredients possible—we recommend Cowgirl Creamery Wagon Wheel Cheese and Laura Chenel goat cheese.

Use the recipe below to get started, then serve the cheese with crackers, add it to a burger, or do as H&R does, and pair it with a fresh-baked warm pretzel. Yum!

Pimento Cheese

6 quart yield.

Seal airtight to keep for a few weeks.

1 tub (4 cups) Sierra Nevada cream cheese

cups aioli or other high quality mayonnaise

8 cups shredded Cowgirl Creamery Wagon Wheel cheese

3 cups Laura Chenel goat cheese

16-18 marinated Piquillo peppers

1 tbsp cayenne

1. Add cream cheese to food processor and blend until whipped.

2. Add remaining ingredients and pulse until thoroughly combined.

3. Serve
